    I found this recipe on AllRecipes.com called “Basic Cheesecake”. I, of course, modified it slightly as I found that some of the ingredients were overpowering. This is the cheesecake I served at the family Easter dinner this year. The final version is as follows:


    Crust

    2 cups graham cracker crumbs
    3 tablespoons brown sugar
    1 tsp ground cinnamon
    pinch of nutmeg
    5 tablespoons of melted butter

    Filling
    3 (8 ounce) packages of cream cheese. (I used light philadelphia)
    1 cup white sugar
    1 cup sour cream
    1 cup heavy cream
    3 tablespoons flour
    1 tablespoon vanilla extract
    3 eggs

    Oven preheated to 350 degrees F
    In a large bowl, combine dry crust ingredients and mix well. Add melted butter to crust ingredients and mix well. Press into the bottom of a 9″ springform pan. Try to get the crumb mixture as high up the sides as you can. Bake for 10 minutes. Let cool.

    In another large bowl, mix cream cheese and sugar well. Beat in sour cream and heavy cream. Add flour and vanilla. Mix in eggs one at a time. Pour batter into crust.

    Bake in preheated oven for 60 minutes. The filling will not quite be set but remove it from the oven and allow it to cool overnight.

    Mix 3-5 tablespoons of brown sugar with a few drops of water, just enough for the brown sugar to dissolve. Pour over cooled cheesecake and cook until the broiler at 400 degrees for 3-5 minutes until brown sugar mixture starts to bubble. (this last brown sugar step is optional…you can also serve it topped with fruit or any other topping you think will taste nice)

    When I did the brown sugar topping and put it under the broiler, it made the cooled filing less firm…it will still be firm but a little more creamy. If you allow it to cool again after it firms right up. Good stuff!

    The cheesecake was awesome! I’m sad that I’m too full to have another piece today.

    Yea boh that cake was goooooodd.. I can’t wait to have a slice again!! :grin:
